Elderberry young trees & seeds. Elderberry is a deciduous shrub or small tree growing to about 6m tall and wide. The ripe dark blue/purple berries are edible after cooking and can be used to make jam, jelly, chutney, syrups, juice, wine and sauces. The flowers are used to make Elderflower cordial or mildly alcoholic sparkling Elderflower “champagne”. The stem-bark, leaves, flowers, fruits, and root extracts are used by herbalists for medicinal purposes.
