Gum Arabic Mixed Grade. Gum Arabic is a natural tree resin drawn from various species of acacia trees.
GUM ARABIC IN BAKING
To help the cake to rise and add natural soluble fibre add Gum Arabic powder to the dry ingredients when baking sponge cakes. Add about 2 tsp. of Gum Arabic powder to a 6 egg recipe.
GUM ARABIC GLUE / GLAZE
Combine Gum Arabic powder with warm water (about 2 tsp. Gum Arabic with 60ml of water) to create an edible glue for sticking sugar pieces together or as a varnish for marzipan or sugar-paste. One layer of Gum Arabic will give a slight sheen and subsequent layers will build up to a very high gloss finish. Each layer must dry before applying the next layer. Gum Arabic glue or glaze can be stored in an airtight jar in a refrigerator for a few months (a few drops of alcohol can be added to the glaze to help increase the mixtures shelf life).
